JICAMA AVOCADO SALAD
2C Jicama (peeled & diced)
[if jicama is not available, daikon makes a spicy version or cucumber]
1 Avocado, small, sliced
½C Carrots (shredded)
¼C Green onions (diced)
¼C Fresh cilantro (chopped, stems removed)
¼C Fresh basil (chopped)
2T Raw pumpkin seeds
½tsp EVOO
1½T Lime juice
1tsp Stevia or coconut nectar
¼tsp Sea salt
Pinch Cayenne (to taste)
Whisk lime juices, EVOO, stevia, salt and cayenne. Pour over vegetables and toss. Refrigerate. Serve chilled with slices of avocado on top.
