Tortilla Soup (raw)

RAW TORTILLA SOUP (serves 1-2)

2C Tomatoes, coarsely chopped

¼C Sundried tomatoes

1C Red bell pepper, coarsely chopped

¾C Cilantro, packed

1C Water

1T Lime juice

1T Cumin

¾tsp Chili powder

1 Garlic clove, medium/large

½tsp Sea salt

Pinch Cayenne pepper

½C Jicama (julienned)


Blend all ingredients until smooth, except jicama and 2 sprigs of cilantro. Garnish with jicama & cilantro.
